‘Savory Carrot Soup’
Ingredients:
*About two cups sliced chantenay carrots
*1 shallot, diced
*1 celery stalk, diced
*2 vegetarian sausage patties
*1 tablespoon olive oil
*½ teaspoon fresh rosemary, minced
*1 large potato, peeled and chopped
*Four cups vegetable broth
*Cilantro leaves for garnish (optional)
Directions:
*Heat olive oil over medium-high heat in a medium saucepan. Cook for two minutes with the shallot.
*Add the celery and cook for about three minutes, stirring regularly.
*Move the vegetables to one side and add two vegetarian sausage patties. Flip when cooked on one side.
*Add potato, chantenay carrots, and rosemary.
*Stir with a spatula to break up the sausage patties.
*Pour in the vegetable broth.
*Bring to a boil, then reduce to low heat and cover partially with the pot lid.
*Cook for about 20 minutes, or until carrots are soft.
*After the soup has cooled, blend it until it is smooth.
*Reheat the soup in the pot.
*Serve hot, garnished with cilantro leaves, if desired.
